...well, here goes nothin!
Got everything ready, lit the fire, connected power & away we go! Overshot my 200 to about 230 (as mentioned by others) and then I loaded the 11.5# brisket.
Loaded with J.D. & Coffee Chips & 2 Chunks O' Cherry.
Guru in place.
Meat prob in, temp probe attached to dome therm w/ drip pan below.

WELL...
My 11.5# brisket is at 188 and pulling with a fork (as you can see on the left corner) after only 16 hours. Certainly the most consistent temp I have ever kept an overnighter but, didn't expect it to be done this quick. I actually read a post the other day where someone's brisket was done much quicker than anticipated. She's been wrapped and put in the cooler till lunch time so we'll see the end result sooner than later now...

It is as described! Once I got things stablized it was stuck on 225 the entire time and once again when I woke up!
Lunch is about an hour away as the brisket is resting nicely in my cooler!!!

Injecting the meat will make it definitely cook faster. Great looking brisket. The guru does work well.

And even better this time...
I'm going to have to try a "great" brisket so I know what I am shooting for. I'm not sure how moist these can get but each time it has been better ( my 5th one).
